The coppa is lightly smoked before being refined in the cellar for several months.
Traditionally coppa is most often eaten on festive days and housewives pay special attention to their conservation.
It is not for nothing that we say in the island "U tene cume à coppa di u venari santu!" for an object to which one is particularly keen.
Which literally means, "he pays attention to it like the Good Friday coppa." How to taste it? Coppa can be eaten as an appetizer, alone or accompanied by other deli meats.
The slices should not be too thin. It is advisable to refrigerate them about 20 minutes before serving.
