Cooking Figatelli - All you need to know

Figatellu, in the plural "figatelli", is a fresh sausage made in the heart of the mountains in the center of the island. It is made in a U shape, dried at a temperature or smoked with beech wood.

However, the figatelli differs from other sausage specialties such as panzetta, lonzu or coppa, by its flavor and composition. Indeed, the figatelli are made from meat, lean and fat flavored with spices, but also pork liver.

Although figatelli have been eaten raw and dry for a long time, containing pork liver, they can transmit the hepatitis E virus. It is therefore important to buy figatelli raw and fresh and to cook them thoroughly in order to avoid health risks and to obtain the perfect cooking.

So what are the best ways to cook these delicious figatelli?

Cooking figatelli in a pan

Step 1: Cut the figatelli into 2 or 3 pieces.
Step 2: Place them in a frying pan over medium heat without adding fat.
Step 3: Cook for about 10 minutes, turning them while cooking.

Cooking figatelli in the oven

Step 1: Preheat your oven to 180 degrees.
Step 2: Prick the figatelli with a fork, then put them on the oven rack, don't forget to put the drip pan under the rack with water.
Step 3: Let cook for 10 to 15 minutes depending on your taste.

Cooking figatelli on the barbecue or in the fireplace

Step 1: Cut the fresh sausage into 2cm wide slices.
Step 2: Thread them on a wooden skewer and place them on a grill.
Step 3: Cook for about 10 minutes, turning them while cooking.
(Tip: Sponge the cooking juices by pressing your bread on the skewer).

How to store figatelli

The raw and fresh figatelli are often sold under vacuum, in this case, follow the expiration date on the packaging. If not, the raw and fresh or cooked figatelli can be kept for 2 to 3 days in an airtight container.
