Recipe for Figatellu Lentils

Ingredients for 3 people

  • 250g green lentils
  • 150g panzetta
  • 1 figatellu
  • 1 carrot
  • 1 onion
  • 2 garlic cloves
  • 15cl white wine
  • 1 tablespoon tomato concentrate
  • Olive oil
  • Thyme, bay leaf
  • Salt and pepper

Preparation of Lentils with Figatellu

(Total time: 1h20 = Preparation: 45min + Cooking: 35min)

Step 1: In a saucepan, add the lentils, a bay leaf and a sprig of thyme, cover with water and cook for a maximum of 20 minutes, starting cold.

Meanwhile..

Step 2: Cut the panzetta into lardons, the figatellu into 3 to 4 cm lengths, the carrot into 1cm x 1cm cubes, the garlic into small pieces, chop the onion and set aside.
Step 3: Once the lentils are cooked, strain them through a sieve, reserving the cooking water.
Step 4: In a saucepan, add the panzetta lardons and sauté over medium heat.
Step 5: Add the chopped onion, garlic, diced carrot and tomato paste and sauté for 2 to 3 minutes.
Step 6: Deglaze with the white wine, reduce, add the lentils and mix well.
Step 7: Add the figatellu slices, the lentil cooking water, a bay leaf, a drizzle of olive oil, stir and simmer over a low heat for 15 minutes.
Step 8: Adjust the seasoning with salt and pepper. Mix and it's ready.

Tasting

Enjoy your plate of figatellu lentils with a glass of Corsican red wine and fresh bread.

Storage

If you haven't finished your dish, you can store it in an airtight tin in the fridge and reheat it the next day.
