Recipe of the Leg of Corsican Goat

The roasted leg of Corsican goat is a very interesting alternative to the famous leg of lamb. Great classic of the Easter celebrations in Corsica, it is a tender and delicious meat.

I propose you another recipe which should delight you by its generosity and its originality. All you have to do is go to the nearest market and select the best products to make this excellent recipe of Corsican goat. Ingredients for 2 to 4 people

  • 1 leg of goat (about 1.2kg)
  • 5 cloves of garlic
  • 2 shallots
  • 3 sprigs of rosemary
  • 3 bay leaves
  • 1 glass of white wine
  • olive oil
  • butter
  • salt and pepper

Preparation of the leg of Corsican Cabri

(Total time: 1h30 = Preparation: 30min + Cooking: 1h)

Step 1: Peel the 2 shallots and the 2 cloves of garlic.
Step 2: Cut the 2 cloves of garlic in several pieces.
Step 3: Prick the meat in different places and insert the garlic pieces.
Step 4: Put the leg of lamb in an ovenproof dish and salt it abundantly on both sides. Then place it skin side down.
Step 5: Drizzle olive oil, a few pieces of butter, 3 cloves of garlic, the bay leaf and rosemary over the top of the leg.
Step 6: Add the 2 shallots to the dish.
Step 7: Preheat your oven to 160°C and place your dish for 1 hour.
Step 8: After 45 minutes of cooking, baste the meat with the white wine and return to cooking.
(At this point, you can prepare your side dish, hash browns, green beans...)
Step 9: Take the dish out of the oven, remove the leg of lamb, garlic, shallot and herbs.
Step 10: Deglaze the dish with a little water, so as to make a juice.
Step 11: Put some of the juice at the bottom of the plates and place a piece of cabri, the garlic and your side dish on top.

Tasting

The leg of Corsican goat goat goes very well with pan-fried potatoes with garlic and herbs from the maquis. I recommend it.

Conservation

You can keep the leg of lamb for a maximum of 2 days in the refrigerator in an airtight box.
