Recipe for Frappes Corse - Donuts

Frappes corses are sweet Corsican doughnuts, which used to be eaten mainly on special occasions such as weddings, christenings and other special occasions. Today, if you're on vacation on the island, you'll easily find them in any Corsican bakery. That said, there are as many recipes for frappes as there are Corsican families: some like them thin and crisp, others thick and chewy. But rest assured, they're all equally delicious - it's all a matter of taste, of course. Today, I'd like to introduce you to a recipe for Corsican frappes. Ingredients for 6 people

  • 500g flour
  • 60g softened butter
  • 3 whole eggs
  • 125g sugar
  • 150ml milk
  • 25g fresh yeast (or 1 sachet dry yeast - 11g)
  • 15ml Pastis
  • 15ml brandy
  • 1 pinch salt
  • 1 lemon zest

Preparing the Frappes Corse

(Total time: 2h45 = Preparation / Resting time: 2h30 + Cooking time: 15min)

Step 1: In a bowl, dilute the fresh yeast with the warm milk and set aside.
Step 2: In a bowl, mix the flour, sugar, eggs, softened butter, pinch of salt, lemon zest, pastis, brandy and milk/yeast mixture.
Step 3: Knead for 10-15 minutes to obtain a smooth, non-sticky Corsican doughnut dough.
Step 4: Cover with a tea towel and leave to rest for at least 2 hours at room temperature.
Step 5: Divide the dough into 2 or 3 pieces and roll out each piece to a thickness of 2 to 3mm.
Step 6: Using a roulette wheel or knife, cut out lozenges in the size of your choice and make a slit in the center of the lozenges.
Step 7: Heat the oil in your deep-fat fryer to 170°C.
Step 8: Dip your frappes in the oil, turning them over and over again without poking them.
Step 9: Once golden-clear, drain and place on absorbent paper, then sprinkle with caster sugar.

You can enjoy your frappes corses with coffee, tea, soda...

Storage

If you haven't finished your frappes corses, you can store them for 3 to 4 days in an airtight tin.
