Recipe of a Traditional Corsican Soup

This recipe is part of these family dishes so authentic that they provide unique emotions. More than a Corsican soup, it is images, smells and nostalgia for some. So simple and so perfect, what more could you ask for!

Ingredients for 6 to 8 people

  • 6 potatoes
  • 3 leeks
  • 250g of green beans
  • 250g of shelled coconuts (or dry beans soaked the day before)
  • 5 chard leaves
  • 4 carrots
  • 1 pig's foot
  • 1 large onion
  • 3 cloves of garlic
  • 1 tbsp. olive oil
  • salt and pepper
  • nepita

Preparation of the Corsican Soup

(Total time : 3h15 = Preparation : 45min + Cooking : 2h30min)

Step 1: Peel and cut the vegetables, onion and garlic cloves into small pieces, then in a pot over medium heat, brown them in olive oil.
Step 2: Then add salt and pepper moderately and cover with cold water.
Step 3: Add the pork trotters and simmer over low-medium heat for 2 1/2 hours.
Step 4: A few minutes before the end of cooking, add nepita according to your taste and adjust the seasoning in salt and pepper.
Step 5: Serve with a ladle in soup plates. Enjoy.

Tasting

Corsican soup goes very well with a Gaffory Orenga wine. Note that the Corsican soup can be made all year round, just adapt the recipe with seasonal vegetables. There are as many Corsican soup recipes as there are Corsican families.

Conservation

You can keep the soup in a cool place in an airtight box for 2 or 3 days.
