Recipe of the Chestnut Log

This famous chestnut log is of course the traditional Corsican Christmas log, but it is also served during the holidays throughout the year.

Made from local products, it is a dessert with an ultra-moist cookie with olive oil and chestnut flour, generously soaked in a brandy syrup and a brocciu mousse. All you have to do is go to the nearest market and select the best products. Take the time to read the recipe carefully and prepare all the ingredients in advance, and off you go.

Ingredients for 8 to 10 people

The cookie :

  • 150 gr chestnut flour
  • 5 eggs
  • 100 gr of sugar
  • 5 tablespoons of olive oil

The brocciu mousse :

  • 500 gr of brocciu
  • 20 cl of liquid cream
  • 100 gr of sugar
  • 1 liqueur glass of myrtle brandy

The syrup :

  • 50 gr of sugar
  • 10 cl of water
  • 1 stick of vanilla
  • 2 lemon peels
  • 1 liqueur glass of brandy (myrtle)

Preparation of the chestnut log

(Total time: 1h = Preparation: 50min + Cooking: 10min)

Step 1: Preheat your oven to 200°C in rotating heat mode.
Step 2: For the cookie, whisk the eggs with the sugar until you have a thick mixture.
Step 3: Gently fold in the flour and olive oil.
Step 4: Place a sheet of parchment paper on a baking sheet and spread a layer of dough of about 1.5 cm.
Step 5: Bake for 8 to 10 minutes max, then take out the cookie and let it cool.
Step 6: For the mousse, whip the brocciu, sugar and brandy until smooth.
Step 7: Whip the cream to a creamy consistency without adding sugar and carefully fold into the brocciu.
Step 8: For the syrup, bring the sugar, water, vanilla and lemon zest to a boil.
Step 9: Remove from heat and let cool, add the brandy to the cold syrup.
Step 10: To make the log, lightly soak the cookie with the syrup using a brush.
Step 11: Fill the cookie with three quarters of the mousse and roll it up with the paper.
Step 12: Cover the cookie with the remaining mousse and sprinkle with chestnut flour.
Step 13: Decorate the log according to your imagination.

Tasting

The chestnut log goes very well with fresh seasonal fruit, glazed chestnuts or small chocolate meringues.

Conservation

You can keep the chestnut log in the refrigerator for 2 days maximum.
