Recipe for migliacci: cheese patties

Have you heard of migliacci? It is a speciality found all year round in Corsica and can be enjoyed with the family, especially during the holidays.

Small salty and crispy cakes with fresh ewe's milk cheese cooked in a wood oven on chestnut leaves. If you don't have a wood oven or chestnut leaves, don't worry, I have the solution! And as we love greed, passion and tradition, we could not, do not propose you the recipe of the migliacci. Come on, let's get started: the ingredients. Don't hesitate to give me your opinion. Ingredients for 4 persons

  • 500g of flour
  • 2 fresh ewe's milk cheeses (700g each / 3 days maturing)
  • the whey recovered from the cheese
  • some water
  • a pinch of salt
  • 2 sachets of baker's yeast
  • 2 eggs
  • 2 egg yolks for gilding
  • Chestnut leaves (Dried and soaked for 2 hours the day before in water) or greaseproof paper sheets.

Preparation

Total time : 2h15 = Preparation : 2h + Cooking : 15 min

Step 1: Separate the cheeses from the whey and reserve. Cut half of a cheese (350g) into strips and crumble the rest (1050g) then set aside.
Step 2: In a bowl, mix the flour and baker's yeast then add the whey gradually while continuing to mix.
Step 3: Add a pinch of salt, the crumbled cheese, the 2 eggs and mix well. Do not hesitate to add a little water, you must obtain a dough neither too thick nor too liquid.
Step 4: Cover the bowl and let the dough rest for 1h45. During this time, start your wood oven or preheat your oven to 240°C.
Step 5: In the wood oven: Superimpose 3 to 4 chestnut leaves so as to make a support and put a good ladle of dough on it.
In the classic oven: Place a sheet of baking paper on your baking tray and place two ladles of dough on each side.
Step 6: Place a few slices of cheese on top of the dough and glaze the top with the egg yolk.
Step 7: Bake for 10 to 15 minutes, the migliacci are cooked once they are golden brown. It's ready to eat!

Tasting

I recommend you to taste the warm migliacci accompanied by a green salad and a good glass of Corsican red wine.
