The lonzu:

Preparation : the Product is placed in natural gut and then parboiled and smoked over beech wood. It follows a drying of 8 weeks minimum

Tasting notes : can Be eaten raw as an appetizer or entrée. The slices can be either very thin or rather thick. The Lonzu do not must be too dry for good tasting. It is well suited to a tasting of the summer given its texture. It can keep for a long time and whose maturation improves the taste.

Composition : pork Fillet, salt, pepper. Deemed skinny.

Piece 700 g approximately.

The Lonzu comes from the nets of the pig. The Lonzu is put in salt according to the traditional process. It is then flavored with a mixture of wine and spices. The Lonzu receives a light smoking before being aged in a cellar for several months.

The Lonzu is made from the mesh which explains that this is a piece to be lean. The Lonzu is preferred by consumers who appreciate the meat of this type.

How is the taste ?

The Lonzu is eaten raw as an appetizer or entrée. The slices can be either very thin type flap is rather thick. For the aperitif we prefer the thin slice, while in entry these will need to be more consistent.
