The Canistrelli ! These delicious Corsican cookies that we eat endlessly and at any time of the day! On our island it is a little cake that can be found everywhere, we all love it and have loved it since we were very young. I still remember my mother making canistrelli plain, with lemon, anise, almonds, chestnut flour and so on, I really had the chance to taste everything, and I'm not talking about the smell in the room! There are many recipes of canistrelli in Corsica, that's why I'm going to give you the family recipe (beware it's top secret!), it's really very simple to make, I hope it will make happy people at home.

(Total time: 30 min = Preparation: 10 min + Cooking: 20 min)
Preheat your oven to 180 °C.
Mix flour, white and brown sugar, salt and baking powder.
Add then olive oil and white wine.
Mix everything well to obtain a beautiful ball of smooth dough.
Expand the dough to a thickness of 1.5cm to 2cm (It depends on your tastes, personally I like them thick so good, do some tests).
With a roller or knife, cut rectangles, squares or diamonds.
Place them on a sheet of baking paper and sprinkle them with icing sugar (powder or crystal).
Bake at 180°C for 20 min (They are cooked when golden brown).
Take the canistrelli out of the oven and let them cool 15 min (Don't eat everything, right away ! yes I know, it's too good ! but that's not a reason !).
The canistrelli can be used at any time of the day, for breakfast, dessert, snack, with coffee, tea... etc. Buon appetitu !
You can keep them in a sealed dry box for 2 weeks. (If you can do it!)
