Recipe of Corsican veal sautéed with olives

The Corsican veal sauté with olives, a classic recipe of the Corsican kitchen, a tender and melting meat, perfumed and incredibly tasty.

It is certain that if you have never tasted this dish before, it is now or never to follow our family recipe, as simple as that. I must admit that it is one of my favorite recipes, and why? Because, believe me, it's hard not to get a refill! In short, enough of the rhetoric and let's get down to the serious stuff, the preparation of our dish. Don't hesitate to give me your opinion. Ingredients for 4 persons

  • 1kg of veal shoulder
  • 1 bottle of rosé wine in summer (red in winter)
  • peanut oil
  • 3 cloves of garlic
  • 1 large onion
  • 1 tbsp tomato paste
  • 500g of green olives
  • 1 bunch of parsley
  • salt and pepper
  • button mushroom (optional)

Preparation of the Corsican veal stir-fry with olives

Total time : 2h = Preparation : 30min + Cooking : 1h30

Step 1: Start by cutting the veal into pieces, peel and coarsely chop the garlic and onion and prepare the rest of the ingredients so that they are ready to use.
Step 2: Heat a generous amount of peanut oil in a large frying pan and fry the veal pieces.
Step 3: In the meantime, mix the garlic and onion together to obtain a purée.
Step 4: Once the meat is well browned, add the garlic and onion purée, the mushrooms, the tomato concentrate, the bunch of parsley, the olives, salt and pepper.
Step 5: Mix everything together, add the wine and let simmer on low heat with the lid closed for 1h30, stirring from time to time.
Step 6: After 1h30 of cooking, the wine has evaporated, the meal is ready!

Tasting

I recommend that you accompany the veal stir-fry with olives with fresh pasta and a good glass of wine, preferably the one you have been cooking with.

Conservation

You can keep them for 2 to 3 days in the refrigerator in an airtight container.

Tips

Favour rosé wine over red wine in the summer, as it will give you a lighter but equally delicious sauce.
