Corsican veal stir-fry with olives, a classic Corsican recipe, a tender and melting meat, flavoured and incredibly tasty. Start by cutting the veal into pieces, peeling and coarsely cutting the garlic and onion and then prepare the rest of the ingredients so that they are ready for use.
Heat a large amount of peanut oil in a large skillet and brown the veal pieces.
During this time, mix the garlic and onion to obtain a purée.
Once the meat is golden brown, add the garlic and onion puree, mushrooms, tomato paste, parsley bunch, olives, salt and pepper.
Mix everything, add the wine and simmer the closed lid over low heat for 1h30, stirring from time to time.
After 1h30 of cooking, the wine has evaporated, the meal is ready !
I recommend that you accompany the veal sauté with fresh pasta olives and a good glass of wine, preferably choose the one you cooked with. Buon appetitu !
