Recipe for Corsican Fiadone with lemon and brocciu

The famous Fiadone ! The perfect Corsican dessert in winter, tasty and light, it is the ideal way to end a meal in style. In winter? Yes, fiadone is made of brocciu, and this good fresh cheese made from sheep's (or goats') milk is made during the lactation period of the herds, from November to June. So if you want to make this recipe in summer, you will have to use bush that will be made from cow's milk. But don't worry, it's still delicious! The recipe for fiadone that I propose to you is the recipe of our region, you can of course be creative and embellish it with what you want. If you are just starting out in the kitchen, this recipe is very easy to make, it will not be a problem. So are you ready? Pâtissez!

Ingredients for 8 people

  • 500 g brocciu (bush)
  • 200 g white sugar
  • the peel of a lemon bio
  • 6 eggs
  • 1 pinch of salt
  • 1 teaspoon organic lemon juice
  • 1 tablespoon myrtle or grappa brandy (optional)

Paste preparation

(Total time : 1 h = Preparation : 25 min + Cooking : 35 min)

  • Step 1 :

    With a fork, crush the brocciu on a plate and reserve.

  • Step 2 :

    Separate the egg whites from the yolks and reserve the whites in a bowl.

  • Step 3 :

    Mix the egg yolks with the sugar in another bowl and whisk vigorously for 2 to 3 min (blanch the eggs).

  • Step 4 :

    Add to this mixture, brocciu, brandy, lemon zest and whip it all and reserve the preparation.

  • Step 5 :

    Preheat your oven to 180 °C on a rotating heat.

  • Step 6 :

    Take your salad bowl with your egg whites and add a pinch of salt and a teaspoon of lemon juice.

  • Step 7 :

    Whip everything to make the egg whites, as soon as they are firm, they are made.

  • Step 8 :

    Gently incorporate the whites mounted with the preparation and mix.

  • Step 9 :

    Put the dough into a baking paper-covered (or buttered) pan and bake for 35 to 40 min at 180 °C at 180 °C on a rotating heat.

  • Step 10 :

    Pull the fiadone out of the oven and let it cool 15 min. It's ready!

Tasting

The fiadone is served cold but you can enjoy it warm. I recommend that you accompany it with a red fruit coulis or a drizzle of brandy. Buon appetitu !

Conservation

You can keep it 2/3 days in the refrigerator but no more, the cheese would not like it.
