Recipe for cannelloni with brocciu and chard

Today we still propose you a great classic of the Corsican cooking, the famous cannelloni with brocciu and chard.

Yes, another authentic recipe which resembles us, simple, effective, very inexpensive, family and without fuss! Even if the brocciu and chard can be replaced by ricotta and spinach, I advise you to make this recipe with the original ingredients, this is what makes it a real Corsican recipe. What we like, the baking of cannelloni in brocciu by the tomato sauce, which gives it an incomparable flavour. Of course, the quality of your dish will depend on the quality of the products. Ingredients for 6 persons

  • 22 round cannelloni to stuff
  • 1 piping bag for stuffing (or a spoon)

The stuffing:

  • 350g of chard leaves (or spinach)
  • 10 mint leaves
  • 1/2 large onion
  • 1 clove of garlic
  • 500g of brocciu (or ricotta)
  • 2 eggs
  • salt and pepper

The tomato sauce :

  • 1L of tomato pulp
  • 1 large onion
  • 1 clove of garlic
  • 1 drizzle of olive oil
  • salt and pepper

Preparation

Total time : 1h40 = Preparation : 1h + Cooking : 40 min

Step 1: Finely chop the chard leaves (green part), mint, 1/2 onion and garlic clove. Reserve in a large salad bowl.
Step 2: Crush the brocciu with a fork on a plate and pour it into the large salad bowl.
Step 3: Add two eggs, season with salt and pepper and mix to form the stuffing and set aside. The stuffing is ready.
Step 4: For the sauce, coarsely chop the large onion and garlic clove.
Step 5: Fry the onion and garlic in a drizzle of olive oil and then add the tomato pulp. Adjust the seasoning and simmer over low heat.
Step 6: Preheat your oven to 150°C (fan heat) and take out the piping bag.
Step 7: Fill the piping bag with your stuffing and garnish your cannelloni.
Step 8: In a gratin dish, pour a layer of tomato sauce and put a layer of cannelloni on top and cover with tomato sauce.
Step 9: Put a second layer of cannelloni and then cover again with tomato sauce.
Step 10: Put your dish in the oven halfway up for 40 to 45 min. It's ready!

Tasting

I recommend you to taste the hot cannelloni with brocciu accompanied by a good glass of Corsican red wine.

Conservation

You can keep them for 2 days in the refrigerator.

Tips

Don't hesitate to cover your cannelloni with tomato sauce to make sure you cook successfully. As a reminder, if you don't find all the ingredients, you can replace the brocciu by ricotta and the chard leaves by spinach.
