The secret of our dishes lies in the use of specialities of the terroir : game varied, figatellu, sausage smoke at the base of pork liver, or of the "brocciu", a fresh cheese of sheep's milk with an "Appellation of controlled Origin". All of this is statement of the flavors most typical of the island, those who were said to Napoleon: "I would recognise them my island, eyes closed, nothing that has the smell of the maquis carried on waves". For all our terrines, 36% of the game is implemented, ensuring a minimum of 30% of the final composition.
